Vegetable Handi Biryani Recipe by Cooking Recipes





ü  Ingredients of vegetable Handi Biryani:
ü  For Rice Recipe.
ü  Take Cumin 2 tsp.
ü  Take Cloves 6-8.
ü  Take Bay leave 2 small.
ü  Take Cinnamon Stick 2 medium.
ü  Take Black pepper corns 6-8.
ü  Take Vinegar 1 tbs.
ü  Take Rice 3 Cup (soaked for an hour).
ü  Take Salt 3 tsp or to taste.
Direction Of vegetable Handi Biryani:
In the pot, Heat water and Then add cumin, cloves, bay leaf, cinnamon sticks, black pepper corns, vinegar and after that bring it to boil.
After it add rice and salt in it, boil rice till 3/4th done, strain and set aside it.

For Vegetable Gravy;
ü  Take Oil ½ Cup.
ü  Take Onions sliced 2 medium.
ü  Take Cumin 2 tsp.
ü  Take Ginger garlic paste 2 tbs.
ü  Take Tomatoes chopped 2-3 medium.
ü  Take Turmeric powder 1 tsp.
ü  Take Salt 2 tsp or to your taste.
ü  Take Coriander powder 1 & ½ tsp.
ü  Take Red chili powder 2 tsp or to your taste.
ü  Take Cauliflower 1 small head (florets separated).
ü  Take French Beans ½ cup (par boiled).
ü  Take Carrots 1 cup (par boiled).
ü  Take Potatoes 3-4 big size(par boiled).
ü  Take Peas 1 cup (par boiled.
ü  Take Capsicum ½ cup.

Directions:
In the Handi add oil and onion, fry until the translucent. 
Then add cumin and ginger garlic paste, salute little and then add tomato in it, stir well.
After that add turmeric powder, salt, coriander powder and red chili powder in it and give it a proper mix.
At the end add cauliflower, French beans, carrots, potato, peas and capsicum in it and mix well.

Layering and Assembling:

ü  Take Fresh coriander 2 tbs.
ü  Take Yogurt ¼ Cup.
ü  Take Cinnamon Powder 1 tsp.
ü  Take Rice boiled.
ü  Take Hot Milk ¼ Cup + yellow food color ¼ tsp.
ü  Take Water ½ cup + red color ½ tsp (or optional).
ü  Take Cashew nuts 1 cup (Slightly roasted).
ü  Take Onions fried 3 tbs.
ü  Take Butter 3-4 tbs.
ü  Take the all spice powder 1 tsp.

Directions Of layering and assembling.
For the assembling, Firstly add fresh coriander, yogurt, cinnamon powder, hot milk+ yellow food color, water ½ cup+ red color ½ tsp, cashew nuts, fried onion, butter and then all spice powders.
After that Cover it and steam cook for 20-25 mints.
Now Serve hot.

ü  For Boil Rice: 
ü  Take Zeera 2 tsp.
ü  Take Laung 6-8.
ü  Take Tez pat 2 small.
ü  Take Dar chini 2 medium.
ü  Take Kali mirch 6-8.
ü  Take Sirka 1 tbs.
ü  Take Chawal 3 Cup (soaked for an hour).
ü  Take Namak 3 tsp ya hasb e zaiqa.

Direction Of Vegetable Handi Biryani:
ü  Sab sy pehly Pot mein pani garam karein phr zeera,laung,tez pat,dar chini,kali mirch aur sirka dal ker ubal lein achi trha.
ü  Ab is mein chawal aur namak dal ker 3/4th done chawal boil ker lein or phr cheen ker usko  side per rakh dein.

For MakingVegetable Gravy: 
ü  Take Oil ½ Cup.
ü  Take Pyaz sliced 2 medium.
ü  Take Zeera 2 tsp.
ü  Take Adrak lehsan paste 2 tbs.
ü  Take Tamatar chopped 2-3 medium.
ü  Take Haldee powder 1 tsp.
ü  Take Namak 2 tsp ya hasb e zaiqa.
ü  Take Dhania powder 1 & ½ tsp.
ü  Take Lal mirch powder 2 tsp ya hasb e zaiqa.
ü  Take Gobi 1 small head (florets separated).
ü  Take Phaliyan ½ cup (par boiled).
ü  Take Gajar 1 cup (par boiled).
ü  Take Aaloo 3-4 big (par boiled).
ü  Take Matar 1 cup and par boiled.
ü  Take Shimla mirch ½ cup.

Direction Vegetable Handi Biryani:
ü   Phly Handi mein oil aur payz dal ker translucent huany tak fry ker lein.
or phr Zeera aur adrak lehsan paste dal ker saute karein, tamatar dal ker ache tarhan mix ker lein usko.
ü   Or phr Haldee powder,namak,dhania powder aur lal mirch powder dal ker ache tarhan mix ker lein Usy.
ü  Or Ab is mein gobi,phaliyan,gajar,aaloo,matar aur shimla mirch dal ker ache tarhan mix keren.

Layering or Assembling k Liye:
ü  Take Hara dhania 2 tbs
ü  Take Dahi ¼ Cup
ü  Take Dar chini powder 1 tsp
ü  Take Chawal boiled
ü  Take Garam doodh ¼ Cup + yellow food colour ¼ tsp
ü  Take Pani ½ cup + red color ½ tsp (optional)
ü  Take Kaju 1 cup (Slightly roasted)
ü  Take Pyaz fried 3 tbs
ü  Take Makhan 3-4 tbs
                      Take Garam masala powder 1 tsp


Es ki Assembling k liya,hara dhania,dahi,dar chini powder,garam doodh+ yellow food color ,pani ½ cup+ red color ½ tsp,kaju,pyaz fried,makhan aur garam masala powder dal ker dhak ker 20-25 minutes kliya dum per rakh dein esko.
